Coffee - Honduras Pedro Turcios (Anaerobic Natural)

Owners, Saadat and Janine first met Pedro Turcios at his home in Honduras in February of 2024 where they experienced first-hand his passion for experimental coffee processing. He spoke of learning techniques from producers in Colombia and utilizing them to ferment his own coffee back home in Chinacla. It seems this has earned him a reputation locally as a forward thinking "mad scientist."

They were so impressed by his dedication to processing and passion for coffee that they knew we needed to have beans from Pedro in Woodcat's lineup. After cupping several wild samples, we selected this Anaerobic Natural with 340 hours of fermentation. It is bursting with jammy sweetness while still being a clean and classic coffee. We are super impressed and excited to bring it to you.

This coffee was exported to us via COMSA (Café Organico Marcala, S.A.), where the well-being of humans is foundational to everything they do. By educating more than 1,500 producer-members to successfully live in harmony with nature, they have built an exceptionally supportive infrastructure for their thriving coffee growing community members including Pedro. 

This is the third and final excellent Honduran coffee to hit our menu from Saadat & Janine's 2024 sourcing trip. You may have already enjoyed an elegant honey processed Catuai from Grasia Maria Peñalba and an excellent washed coffee from David Argueta who we've been buying from for several years!
