This past picking season, Dinosaur & Woodcat's co-owners Saadat & Janine were able to travel to Honduras to visit the farmers we've been working with for the past several years. Their first stop was the town of Marcala to learn about a coffee co-op called COMSA (Café Organico Marcala, S.A.), where well-being of humans is foundational to their philosophy. By educating more than 1,500 producer-members to successfully live in harmony with nature, they have built an exceptionally supportive infrastructure for their thriving coffee growing community members.
After cupping so many exceptional coffees they selected three outstanding coffees that will be hitting our menu this fall, the first being this one. An elegant honey processed Catuai from Grasia Maria Penalba and grown on her farm Finca La Perla Azul, this coffee is just perfect for fall with it's warming aromas of baking spice and a soft juicy fruit acidity reminiscent of a candy you'd pluck from a bowl at grandma's house.
